- Mmixture of dried and rolled green tea leaves (sencha), baked and puffed rice and Matcha. It combines the refreshing flavor of green tea with the warm flavor of grilled rice. Once intended for the poor, it is now very popular in all classes of society. It is also called “popcorn tea” because, during roasting, the rice grains sometimes burst, like corn kernels.

Japanese green teas are prepared by infusing whole leaves in hot water. The amount of tea and water, the temperature of the water and the duration of the infusion depend on the type of tea chosen and the desired result. In this case it is also important to use fresh water (slightly mineralized) and take the temperature into account. The higher it is, the greater the bitterness.

For the best flavor experience, make it a second (and even a third) time. During the first infusion, the spiral leaves slowly open and emit their primary flavors. During the second infusion, when they are already open, you will discover the richness of a variety of secondary flavors. To do this, simply place the decanted leaves back to infuse in the same amount of water, at approximately the same temperature and for the same duration or a slightly shorter duration, depending on your preference.
