Wheat gluten is a component of seitan or Minchin. "Seitan" means "protein" in Japanese. It is a paste obtained after mixing gluten and water, tamari or olive oil is also added, depending on the recipes.

You can add gluten to bread recipes, including those with gluten-free flour.
Preparation:
To make gluten bread, replace 15% of the recommended amount of flour with wheat gluten.
