What is the best way to consume coconut oil?

You can add it to cold preparations, such as salads and fruit juices. Also, it can be used in the preparation of cakes, pies and many recipes replacing other types of fats. 

However, it is not highly recommended to be used in fried foods, because in addition to being an unhealthy use, it can leave foods with a coconut taste, such as french fries, for example.

  • Wet Coconut Cake

Ingredients:

2 cups of flour

1 cup and 1/2 of Açucas

1/2 cup oil

125g of grated coconut

4 eggs

1 cup of hot water

1 cup of hot milk

1 teaspoon of yeast 

Preparation

1) Mix the eggs with the sugar and beat well. Add the oil, the coconut, the flour with the yeast, always beating between each addition.

2) Finally, add the hot water and beat more.

3) Line with a buttered pan, sprinkle with flour, preheat the oven to 180º and bake for 35 to 40 minutes approximately. 

4) Remove from the oven and pour the cup of hot milk over it, let it cool and unmold it after it is cold. 

5) For topping, you can throw shredded coconut or make some topping of your choice. 

  • Coconut Pancakes

Ingredients:

100g T55 unleavened wheat flour (if you want a gluten-free version use rice flour).

50g of grated coconut

1 c. Powdered cinnamon tea

1 C. powdered yeast tea

1 egg

250ml of milk 

Preparation

1) Mix all the ingredients in a blender and beat for a few seconds. Allow the dough to rest for at least 15 to 30 minutes or overnight in the refrigerator.

2) Heat a non-stick frying pan over medium heat and grease with coconut oil. Each pancake should have an average equivalent to a soup ladle. Place each portion in the pan and cook 1-2 on each side.

3) Serve with the topping of your choice. 

  • Creamy Pumpkin Puree with Coconut Oil

pumpkin puree

Ingredients:

1 medium pumpkin

1 cup of coconut milk

1 c. Coconut oil soup

2 grated medium garlic cloves

Salt, fresh herbs, cinnamon and black pepper to taste.

Preparation

1) Beat the cooked pumpkin with the garlic and spices. 

2) In a saucepan, mix the beaten pumpkin with half a cup of coconut milk and coconut oil. 

3) Heat over medium heat, stirring constantly, for about five minutes, until released from the bottom of the pan.
