Very popular since ancient times, green lentils are the richest in iron and protein of all vegetables. Much appreciated in hot and cold dishes.
Preparation:
It is recommended to wash the lentils with water before cooking. Place 1 volume of lentils in 3 volumes of cold water. Heat until boiling. Cook for 45 minutes, over low heat. Season with salt at the end of cooking. To facilitate the digestion of lentils, you can add some cumin, anise or fennel seeds to the cooking water.
