Kombucha is a drink originating in the East, known to the Chinese as the “elixir of immortal health”. This drink results from the fermentation that occurs after the addition of bacteria, yeasts (“Scoby” - symbiotic culture of bacteria and yeasts healthy for the body) and sugar, to black or green tea. Sugar serves as food for bacteria and yeasts during fermentation, being present in Kombucha in small quantities. The bacteria transform the sugar into lactic acid, which gives the drink a characteristic flavor. After fermentation, the kombucha is carbonated, becoming naturally carbonated, and contains vinegar, B vitamins, antioxidants, enzymes, probiotics (Lactobacillus acidophilus and Saccharomyces boulardii) and organic acids (acetic, gluconic and lactic) responsible for the beneficial effects assigned:

- It has a pH of about 3.0 (acidic pH), however, it does not acidify the organism, because during its digestive process it becomes an alkalizing substance helping to balance the pH of the organism;
- Helps to detoxify the body;
- Due to the content of antioxidants, probiotics and enzymes, improves gastrointestinal health. It facilitates digestion, contributes to the healing of stomach ulcers, as well as has the potential to inhibit the growth of pathogenic organisms, such as Candida albicans;
- Inhibits the development of pathogenic microorganisms in the intestine, preventing infections and stimulating the immune system;
- Increases energy levels;
- Helps regulate blood sugar levels;
- Favors weight loss due to its high content of acetic acid (it has a thermogenic effect and inhibits the activity of enzymes that act in the digestion of carbohydrates preventing their absorption).

Kombucha can be consumed at any time of the day and anywhere. It is stored in a dark bottle to protect probiotics from harmful ultraviolet rays and fluorescent light from home refrigerators.
Due to its high content in beneficial microorganisms, it is another option besides yogurt, kefir, miso, natto and tempeh.
It has a negligible amount of caffeine (<5 mg).

 

 

 

 

How to use: The initial dose should be 100-150ml twice a day. After a few days, it can increase to the desired amount and with which you feel beneficial effects.
It is advisable to drink a cold drink.
